With the start of the New Year, new cravings and delicious foods are beginning to appear, so we’ve gathered a few quick and easy recipes to help satisfy those cravings at the beginning of the year.
Chocolate chip cookies are such a simple and quick snack to bake any time of the school year. The prep time for this recipe is just 15 minutes!
Ingredients:
- 2 1/4 cups all purpose flour
- 1 tsp baking soda
- 1 1/2 tsp cornstarch
- 1/2 tsp salt
- 3/4 cup melted butter
- 3/4 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg, plus 1 egg yolk
- 2 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
Steps:
- Whisk the flour, baking soda, salt and cornstarch together in a large bowl. Set aside.
- In a medium bowl, whisk together the melted butter, brown sugar and granulated sugar until no sugar lumps remain. Whisk in the egg followed by the egg yolk, then the vanilla.
- Pour the wet ingredients into the dry ingredients and mix together with a spatula.
- Fold in the chocolate chip cookies and refrigerate the dough for approximately 2 hours.
- Take the dough out of the refrigerator and let it chill for 10 minutes.
- To make mini cookies, roll 1 tablespoon of cookie dough and place approx. 2 inches apart on a baking sheet.
- Bake for 10 minutes (or until the sides are golden brown.)
*Pro tip: If you notice that your cookie dough balls don’t have enough chocolate chips in them, feel free to insert a few on top before you pop them in the oven.
