New Year, new recipes

With the start of the New Year, new cravings and delicious foods are beginning to appear, so we’ve gathered a few quick and easy recipes to help satisfy those cravings at the beginning of the year.

Chocolate chip cookies are such a simple and quick snack to bake any time of the school year. The prep time for this recipe is just 15 minutes!

Ingredients:

  • 2 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp cornstarch
  • 1/2 tsp salt
  • 3/4 cup melted butter
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg, plus 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Steps:

  1. Whisk the flour, baking soda, salt and cornstarch together in a large bowl. Set aside.
  2. In a medium bowl, whisk together the melted butter, brown sugar and granulated sugar until no sugar lumps remain. Whisk in the egg followed by the egg yolk, then the vanilla.

  3. Pour the wet ingredients into the dry ingredients and mix together with a spatula.
  4. Fold in the chocolate chip cookies and refrigerate the dough for approximately 2 hours.
  5. Take the dough out of the refrigerator and let it chill for 10 minutes.
  6. To make mini cookies, roll 1 tablespoon of cookie dough and place approx. 2 inches apart on a baking sheet.
  7. Bake for 10 minutes (or until the sides are golden brown.)
*Pro tip: If you notice that your cookie dough balls don’t have enough chocolate chips in them, feel free to insert a few on top before you pop them in the oven.
