Sweetheart Series: Comfort food for singles

Valentine’s day is almost coming up, and to help cope with Single Awareness Day, more notably known as S.A.D, here are a few comfort recipes to help a lonely soul!

Macaroni and Cheese in a Mug

Ingredients:

  • 1/2 cup elbow macaroni noodles
  • 1/2 cup milk or water (milk will make the macaroni and cheese creamier)
  • 1/2 cup finely shredded cheddar cheese

mug and place it on a large plate.  Then, microwave it for 1 minute, stir and make sure that the noodles don’t stick to the bottom.  Then, microwave it for one minute, and stir again.  Depending on the microwave being used, the noodles may need to be cooked for a bit longer.  After that, if water is being used, pour out the remaining water and add the cheese until it coats the noodles. The macaroni and cheese is finished!  Simply devour!

Single Serve Chocolate Chip Cookie Dough

Ingredients:

  • 1 tablespoon white granulated sugar
  • 1 tablespoon brown sugar
  • 1-1½ tablespoon butter, softened
  • 1-2 tablespoons chocolate chips (or other add-ins)
  • 1 tablespoon water
  • ⅛ teaspoon vanilla extract
  • Pinch of salt
  • Pinch of baking soda
  • 4 tablespoons flour (more if your butter is melted)

First, combine all the ingredients into a bowl and mix well.  Then, enjoy!

Snickerdoodle Mug Cake

Ingredients:

  • 1/4 cup + 2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 cup milk, at room temperature
  • 2 tablespoons salted butter, melted and cooled
  • 1/2 teaspoon pure vanilla extract
For layering/topping:
  • 1 tablespoon sugar
  • 1/4 teaspoon cinnamon

To start off, in a bowl, whisk together flour, sugar, and baking powder until everything is combined.  There can’t be any streaks or anything!  It has to be completely combined.  Next, add milk, butter, and vanilla until the batter is smooth.  Into the biggest microwave safe mug that can be found, scoop a spoonful of batter and sprinkle a bit of cinnamon sugar on top.  Alternate layers, each ending with cinnamon sugar.  Last, microwave it for about 1 to 1 1/2 minutes and allow for it to cool for a few minutes until you dig in!
