Macaroni and Cheese
Ingredients:
- ½ cup macaroni
- ½ cup water
- ¼ tsp salt
- ¼ cup milk
- ¼ to ½ cup shredded cheese
- Combine pasta, water, and salt in a bowl.
- Microwave for 2 minutes, then stir.
- Continue microwaving in 2 minutes intervals for about 4 to 8 minutes, until your macaroni noodles get soft.
- Stir in milk and cheese.
- Microwave in 30 second intervals for 1 minute. Stir between each interval.
- Enjoy!
Scrambled Eggs
Ingredients:
- 2 eggs
- 1 tbsp salsa
- 1 tbsp shredded cheese
- Olive oil or cooking spray
- Salt and pepper
- Optional: chives
- Coat your mug with olive oil or cooking spray.
- Add the eggs and whisk.
- Add the salsa, cheese, salt and pepper. Whisk until combined.
- Microwave for 1 minute.
- Stir and microwave for 45 seconds.
- Garnish with chives and serve.
- Serve with a side of fruit for a nice balance.
Mushroom Risotto
Ingredients:
- ½ tbsp butter
- ½ onion finely chopped
- 1 garlic clove, finely chopped
- ¼ cup rice
- 2 tbsp broth
- Mushroom
- Parmesan
- Add ½ tbsp butter and spoonful of onion in a bowl.
- Microwave for 1 ½ minutes in 30 seconds intervals. Stir between each interval.
- Add the garlic, rice, and broth. Cover loosely with plastic wrap and microwave for 2 minutes.
- Stir and microwave for 2 more minutes.
- Add the mushroom and parmesan. Microwave for 1 minute.
- Serve topped with shredded cheese, and optional green onions.
