Teriyaki Chicken
Ingredients:
- ⅛ cup soy sauce
- ⅙ cup orange juice
- 1 ½ tbsp honey
- 1 tsp sesame oil
- 1 lb chicken
- 1 tbsp cooking oil
- ½ tbsp butter
- In a bowl, whisk the soy sauce, orange juice, honey and sesame oil.
- Cut the chicken into 1 inch pieces and let them sit in the marinade for 20 minutes.
- Pour oil into a pan and cook the chicken thoroughly. Reserve the marinade for later.
- Remove the chicken from the pan and place onto a plate.
- Pour the rest of the marinade and butter into the pan. Bring to a boil and stir consistently until slightly thickened. Add the chicken back into the pan and stir to combine.
Roasted Butternut Squash
Ingredients:
- Half of a small butternut squash
- Olive oil
- Salt and pepper
- Preheat oven to 400 degrees fahrenheit.
- Cut the butternut squash into 1 inch cubes.
- Place squash in the pan and drizzle with olive oil, salt, and pepper.
- Roast for 25 to 30 minutes or until tender.
Apple and Walnut Salad
Ingredients:
- 2 cups chopped lettuce
- Half of one small apple, thinly sliced
- A handful of chopped walnuts
- 1 tbsp of feta cheese
- Combine the lettuce, apple and walnut in a bowl.
- Sprinkle with feta and enjoy.
Ham Eggroll
Ingredients:
- 3 eggs
- 2 tbsp cooking oil
- 2 tsp sugar
- 1 tsp soy sauce
- 1 tsp mirin
- 1 piece of ham
- Crack your eggs into a bowl and whisk entirely until the mixture is yellow.
- Add the sugar, soy sauce and mirin, and whisk until combined.
- Pour oil into the pan and add a thin mixture of the egg mixture into the pan. Rotate the pan to cover the entire surface.
- After the sides of the eggs are cooked and a majority of the surface is cooked, place your ham in the middle and using a spatula, roll the egg from one side to meet the next.
- Remove the roll and cut into smaller rolls.
Sesame Rice
Ingredients:
- 1 cup rice
- 1 tbsp sesame seed
- ¼ tsp sesame oil
- Salt and pepper
- Cook your rice according to the box instructions.
- Fluff the rice with a fork.
- Toss it with sesame seeds and oil. Season with salt and pepper.
