Strawberry Shaved Ice
Ingredients
- 1 1/2 cups strawberry
- 2 tbsp lemon or lime juice
- 3/4 cup water
- 3/4 cup sugar
- Ice
- Optional: condensed milk
Instructions
Making the Syrup
- Place the strawberries in a blender or food processor and blend until pureed.
- Pour the mixture into a saucepan and add lemon/lime juice, water and sugar.
- Cook over medium heat and stir occasionally until it boils. Turn down the heat to medium-low and let the mixture continue to simmer for five minutes before removing from heat.
- Let the syrup cool completely.
- Strain with a fine-mesh strainer to remove all the seeds and pulp. You can use the syrup immediately or store it in the refrigerator. (It’s better if it’s chilled).
Making the Ice
- You can either blend the ice or use a shaved ice machine.
- If you are using a blender, blend a couple of cubes at a time. Pulse a few times at the highest speed before blending on high.
Place shaved ice in a bowl and pour syrup until coated well and serve! Add a drizzle of condensed milk for extra sweetness.
